Braised Beef Ravioli with Red Wine Reduction

The Cucina di Carla Story
 
1 x 16 oz. Package of Carla's Braised Beef Ravioli
1 Tbsp. Tbsp. Extra Virgin Olive Oil
32 oz. Red Wine of Choice
32 oz. Beef Stock
2 Shallots
1 Sprig Thyme
1 tsp. Tomato Paste
1 Tbsp. Parmesan Cheese
1 Tbsp. Parsley, Roughly Chopped
1 Tbsp. Butter
1 tsp. Fresh Cracked Black Pepper

  • 1. Bring 6 quarts of water to a boil.
  • 2. Cook Shallots, Thyme, and Tomato Paste over medium high heat in a sauce pan with Extra Virgin Olive Oil until lightly caramelized.
  • 3. Add Red Wine and reduce to ¼ of original volume.
  • 4. Add Beef Stock and reduce to ¼ of original volume.
  • 5. Simmer Ravioli in boiling water for 2-3 minutes until filling is hot and pasta is cooked.
  • 6. Mix Butter into reduced Red Wine and Stock combination.
  • 7. Toss Pasta with Sauce and garnish with Cheese, Pepper, and Parsley to serve.
