Turkey Tortellini Soup with Broccoli Rabe & Sausage

1bag. Carla's Pasta Tortellini

1 Bunch Broccoli Rabe Cleaned & Blanched

4ea. Mild or Hot Italian Sausage Links

3C. Diced Turkey

1.5 Qts. Flavorful Chicken Stock

1C. Starchy Pasta Water

Salt & Pepper - As Needed

EVOO - As Needed

Carla's Pasta Sun-Dried Tomato Pesto - Garnish

Shaved Pecorino Romano as Garnish

The Cucina di Carla Story


  1. Grill or Roast Sausage in Oven & reserve. Slice sausage when cooled into bite sized portions
  2. Clean Broccoli Rabe, cutting the florets & reserving some but not all leaves (to avoid bitterness) Blanch the Broccoli Rabe in the Salted Water, Drain & Reserve.
  3. Once Blanched , Add Rabe & Turkey to a Soup Pot, Add Chicken Stock & let simmer
  4. Cook Tortellini As Directed & add a touch of the Starchy Pasta Water to the Stock & Broccoli Rabe Add Tortellini & cut Sausage & cook for 2 minutes.
  5. You may want this to thicken slightly, but it is still Broth-Based.
  6. Ladle equal servings into 4ea Pasta Bowls. Garnish with 1ea ½ Sausage, Shaved Pecorino & a small Dollop of Sun-Dried Tomato Pesto & Serve Immediately.
