Braised Beef Ravioli with Red Wine Reduction

Serves 4

Instructions

 
  1. 1 x 16 oz. Package of  Carla’s Braised Beef Ravioli

    1 Tbsp. Extra Virgin Olive Oil

    32 oz. Red Wine of Choice

    32 oz. Beef Stock

    2 Shallots

    1 Sprig Thyme

    1 tsp. Tomato Paste

    1 Tbsp. Parmesan Cheese

    1 Tbsp. Parsley, Roughly Chopped

    1 Tbsp. Butter

    1 tsp. Fresh Cracked Black Pepper

Directions

 
  1. Bring 6 quarts of water to a boil.
  2. Cook Shallots, Thyme, and Tomato Paste over medium high heat in a sauce pan with Extra Virgin Olive Oil until lightly caramelized.
  3. Add Red Wine and reduce to ¼ of original volume.
  4. Add Beef Stock and reduce to ¼ of original volume.
  5. Simmer Ravioli in boiling water for 2-3 minutes until filling is hot and pasta is cooked.
  6. Mix Butter into reduced Red Wine and Stock combination.
  7. Toss Pasta with Sauce and garnish with Cheese, Pepper, and Parsley to serve.
